Google Nexus 7 (2013) — I lost off line maps following update to Kit Kat

I had a perfectly working off line with the old android software. I systemically refused to upgrade the maps from version 4 to 7. Unfortunately I agreed to upgrade the android software to KitKat and (what a dirty trick) the G maps were updated as well in spite of my specifying that they should not be updated. The new G maps do not allow storage of off line maps. I am sorry to report that the instructions to do that (dated july 2013) on the web refer to situations that do not exist with KitKat.

I have two questions: 1) How can I store off line maps with the 4.4 version with G maps version 7.3.0
and if that fails 2)- How can I uninstall Kit Kat and return to my old software that worked so well. 2
